Why did you assign the fix color to the ponytail instead of the hat?
According to Bricklink, there are currently two variants of this part. Both times the hat has the color tan.
So only one file would need to be stored.

dual mould or print? if print, the printed surfaces get colored...
if dual, keep it.

What is the logic behind this?

is that a print? could it even be that the print is just outside?
(could mean that you have to move the inside to the unpatterned helmet subpart)
-> anyone having the parts (preferrably both) to check the inside?

This isn't a dual mould.
I have only the dark orange. It's a print, but the inside of the ponytail is printed too.
Video reviews of the red, show a tan printed helmet on a red part.

"It's a print, but the inside of the ponytail is printed too."
how far up? connector/inside?
do we need different subparts?
one shortcut with hardcoded helmet?

"how far up? connector/inside?"
Look at this: https://picclick.es/Aut%C3%A9ntica-minifigura-femenina-LEGO-serie-13-2015-paleont%C3%B3logo-226004960666.html it's for 18829pb01 and https://m.youtube.com/watch?v=O7z_P9kRetM (see from min 2:30) it's for 18829pb02.
"do we need different subparts?"
Yes, at least 3 subparts.
"one shortcut with hardcoded helmet?"
Maybe.
Hope I help with these one.

thanks for the links!
-> I would say we need 2 additional subparts: helmet bottom and hair inside...

in the video Javier linked, it looks like the bottom part of the helmet ring is also unpatterned...
should that also get subparted?
should the colors get flipped? (because technically, the tan top is patterned)

that could be possible, the friends figures have slightly different hair material than normal minifigs

There is no logical explanation why the underside of the helmet should be the same color as the hair. It is through the production process. I'll leave it as it is.
